#1. Flying Cloud

A great-tasting cocktail that’s summer in a glass, made for sipping across the seasons? That’s our ever-popular cocktail, the Flying Cloud. Both pretty and pretty delicious, it’s a fusion of Italian Malfy Gin Rosa, Aperol, citrus and fresh watermelon, topped with edible flowers and a fluffy little cloud of fairy floss.

St Siandra’s restaurant manager and curator of our drinks list, Adam George, says: “The flavours balance out evenly with enough sweetness to keep the sweet cocktail fans happy but it's still light with the citrus. This creates the balance along with the spirits and sweetness coming from the watermelon and not from a sugar syrup or refined sugar source.”

#2. Heaven Can Wait

Jumpstart those sundowner vibes with our Heaven Can Wait cocktail. This nectar of the gods ticks all the boxes: Kettle One, Passoa Passion Fruit Liqueur, Liquor 43, topped with prosecco. It’s oh-so-bubbly and tastes refreshingly divine. Relax with this drink in hand and watch the waves roll over the white sands of our private beach at Mosman’s The Spit, and you might just think you’re in Positano.

#3. Amaretto Sour (mocktail version)

Want all the taste of a carefully-crafted cocktail but you’re skipping the booze? Breeze into St Siandra and order up one of our expertly-made mocktails, starting with our favourite non-alcoholic Amaretto Sour. It’s made with Lyress amaretti, lemon, bitters, egg white and syrup. All the features of an amaretto sour, minus the alcohol. Perfect for that sunshine sipping by the water.
